Files that were already downloaded stay on the computer; new changes no longer sync to the cloud until you sign in again.
You can also quit it from the cloud-icon menu (Pause syncing / Close OneDrive) for a temporary stop, which comes back after a reboot unless startup is disabled.
On some Windows 11 Home/Pro installs, OneDrive is tightly integrated; unlinking + disabling startup is enough for most people and is easier to reverse than uninstalling.
